Getting around: do you need a car?
Public transport — no car. This is a straight westward run on the Shinkansen, so a JR Pass can actually pay off here (Tokyo→Fukuoka is a long way). Trains drop you in the heart of each food city; a car would just be a parking headache. IC card for the local hops to markets and neighbourhoods.

A westward feast on one rail line: Tokyo → Osaka (→ Kyoto day) → Hiroshima → Fukuoka.
Day 1–2 — Tokyo: sushi & refinement
- A sushi breakfast at Toyosu market (or the outer Tsukiji stalls).
- Tempura, unagi (grilled eel), and an izakaya crawl in Shinjuku.

Day 3–4 — Osaka: the nation's kitchen
Osaka's motto is kuidaore — "eat until you drop".
- Dōtonbori and Kuromon Market: takoyaki, okonomiyaki, kushikatsu.
- A day trip to Kyoto for refined kaiseki or tofu cuisine as a contrast.

Day 5 — Hiroshima: okonomiyaki & oysters
- Hiroshima-style okonomiyaki — layered, not mixed, with noodles — at Okonomi-mura.
- Oysters from the Seto Inland Sea, best in winter.

Day 6–7 — Fukuoka: ramen heaven
The finish line, on Kyushu.
- Hakata ramen — rich tonkotsu — at its birthplace.
- The riverside yatai stalls of Nakasu by night.
